Serves 4
1 12-ounce package of dried pasta - choose your favorite shape!
1 T. olive oil
3 cups of your favorite veggies cut into bite-sized pieces. Try these: Texas zucchini, broccoli, green beans, peas, carrots, cherry tomatoes and red or green bell peppers
1/2 cup pesto - you can purchase this in the refrigerated section of the grocery store
1/2 cup plus 2 T. of fresh Parmesan cheese, grated
Wash vegetables well.
Prepare the pasta according to the directions on the package. Drain and return to the pot you boiled it in.
Heat olive oil in a large saucepan set over medium heat. Add the vegetables and saute for 5 minutes. The vegetables should remain crisp and not limp or squishy.
Add the pesto, vegetables and 1/2 cup of Parmesan cheese to the pasta and toss gently. Reheat slightly if the pasta has become too cold.
Sprinkle the remaining cheese on each plate and serve.
